Skill Level: SO easy!
Why this is SO good:
A citrusy Pineapple soft serve you make at home? You can make it even more tropical (and less dairy) by subbing out the ice cream for coconut milk. Tropica-licious!
Ingredients:
1 1/2 cups pineapple juice
2 cups vanilla ice cream (or coconut milk!)
4 cups frozen pineapple
2 TBSP lime juice
Sunny Strawberry Sugar, to taste
How to make it:
Put the 1 1/2 cups pineapple juice, the 2 cups vanilla ice cream (or coconut milk), the 4 cups frozen pineapple, and the 2 TBSP of lime juice in a high powered blender, and fire it up! Blend on medium-high, stopping to push pineapple chunks down if needed.
Transfer to a bowl, cover and freeze for about 30 mins.
Scoop into serving bowls, and sprinkle Sunny Strawberry Sugar on top, as much as you’d like! Garnish with strawberry slices, or fresh pineapple slices too!
How to store it:
In the freezer! If you want to keep it a secret, just label it something like ‘chicken broth’ and it will be -safe- from the teenagers!
So, what if:
I don’t have a high-powered blender. No Prob! Just let the pineapple chunks thaw, or use canned ones. You’ll just need to freeze it for longer since they don’t start as cold. Still delicious!
I’d like it to look fancier! Easy enough! If you’ve used frozen pineapple, you can put the mixture into piping bags with star tips and pipe it into serving dishes, then freeze those. Add some strawberry slices if you’d like!
I want to make it with some ‘extra'. Ok, party animal! A splash of vodka or coconut rum I bet would do well.
